Tuesday's Tip

I've always loved baked potatoes, but could never get the "perfect" skin until my brother, who used to be a manager at Red Lobster, shared this tip with me. Now, I, too, can make a pretty mean baked potato!

How to make the world's best baked potato, at least IMO:

Scrub and dry potato
Cut a slit in the top
Liberally rub lard over the skin of the potato
Roll in kosher salt (Table salt will not work, as it will be way too salty)
Bake directly on rack in oven @ 350 for 1- 1 1/2 hours, or until soft.
